Smokey Smashed Chickpea and Avocado Sandwiches
These Smokey Smashed Chickpea and Avocado Sandwiches are a delicious and satisfying vegan option for lunch or dinner. The creamy texture of the mashed chickpeas and avocado pairs perfectly with the smoky flavor of paprika, making for a flavorful and nutritious sandwich.
Ingredients:
- 1 can chickpeas, drained and rinsed
- 1 ripe avocado
- 1 tablespoon lemon juice
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cumin
- Salt and pepper to taste
- 4 slices whole grain bread
- Handful of spinach leaves
- Optional toppings: sliced tomatoes, red onion, vegan mayo, hot sauce
Instructions:
In a bowl, mash the chickpeas and avocado together with a fork until desired consistency is reached
Add lemon juice, smoked paprika, garlic powder, cumin, salt, and pepper to the chickpea-avocado mixture
Mix well to combine
Toast the slices of bread until golden brown
Spread the chickpea-avocado mixture onto two slices of toast
Top with spinach leaves and any optional toppings of your choice
Place the remaining toast slices on top to form sandwiches
