Instant Pot Chicken and Vegetable Stew



This hearty chicken and vegetable stew cooks up quickly in the Instant Pot and is great for a meal to warm you up on a busy day.

Ingredients:

  • 1 lb chicken breast, diced
  • 2 cups carrots, chopped
  • 2 cups potatoes, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions:

Set Instant Pot to saut mode and heat olive oil

Add diced chicken breast and cook until browned

Add onion and garlic, cook until fragrant

Add carrots, potatoes, thyme, rosemary, salt, and pepper

Pour in chicken broth, close lid, and set to high pressure for 10 minutes

Once done, perform a quick release

Serve hot and enjoy!
