Grilled Provencal Chicken and Peppers
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 orange bell pepper, sliced
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
- 1 tablespoon dried rosemary
- Salt and pepper to taste
- Lemon wedges for serving
Instructions:
Preheat the grill to medium-high heat
In a small bowl, mix together olive oil, minced garlic, dried oregano, dried thyme, dried rosemary, salt, and pepper to create a marinade
Place chicken breasts and sliced bell peppers in a large bowl
Pour the marinade over them and toss to coat evenly
Let it marinate for at least 30 minutes
Thread the marinated chicken and peppers onto skewers, alternating between chicken and peppers
Grill the skewers for about 15-20 minutes, turning occasionally, until the chicken is cooked through and the peppers are tender and slightly charred
Remove skewers from the grill and let them rest for a few minutes
Serve the Grilled Provencal Chicken and Peppers with lemon wedges on the side
