Smoked Salmon Scrambled Eggs
Ingredients:
- 4 large eggs
- 2 tablespoons heavy cream
- 2 tablespoons unsalted butter
- 3 ounces smoked salmon, chopped
- Salt and pepper to taste
- 2 tablespoons chopped fresh chives, for garnish
Instructions:
In a bowl, whisk together the eggs and heavy cream until well combined
Season with salt and pepper
Heat a skillet over medium-low heat and melt the butter
Pour the egg mixture into the skillet and let it cook undisturbed for a few seconds until it starts to set at the edges
Using a spatula, gently push the eggs from the edges towards the center, allowing the uncooked eggs to flow to the edges of the skillet
Continue cooking and gently stirring until the eggs are mostly set but still slightly runny
Add the chopped smoked salmon to the skillet and gently fold it into the eggs
Cook for another minute or until the eggs are fully set and the salmon is heated through
Remove from heat and sprinkle with chopped fresh chives for garnish
Serve immediately and enjoy!
