Paleo Popcorn Meatballs
These Paleo Popcorn Meatballs are a delicious and healthy snack or appetizer option for those following a Paleo or AIP (Autoimmune Protocol) diet. They are made with ground beef, coconut flour, and shredded coconut, seasoned with aromatic herbs and spices. These meatballs are perfect for satisfying your craving for a savory and satisfying snack.
Ingredients:
- 1 lb ground beef
- 1/4 cup coconut flour
- 1/4 cup finely shredded coconut
- 1/4 cup minced onion
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1/4 cup homemade Paleo mayonnaise
- 1/2 tsp sea salt
- 1/4 tsp black pepper omit for AIP
- 1/4 tsp dried oregano
- 1/4 tsp dried basil
- 1/4 tsp dried thyme
- 2 tbsp coconut oil for frying
Instructions:
In a mixing bowl, combine ground beef, coconut flour, shredded coconut, minced onion, minced garlic, chopped parsley, Paleo mayonnaise, sea salt, black pepper if allowed, dried oregano, dried basil, and dried thyme
Mix the ingredients thoroughly until well combined
Shape the mixture into bite-sized meatballs and set aside
Heat coconut oil in a skillet over medium-high heat
Add the meatballs to the skillet and cook until they are browned on all sides and cooked through, about 8-10 minutes
