Hot Chocolate Pudding Parfait
Ingredients:
- 1 cup whole milk
- 1/2 cup granulated sugar
- 1/4 cup unsweetened cocoa powder
- 2 tablespoons cornstarch
- 1/4 teaspoon salt
- 2 large egg yolks
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1 cup chocolate cookies, crushed
- Whipped cream and chocolate shavings for garnish
Instructions:
Over medium-low heat, mix the milk, sugar, cocoa powder, cornstarch, and salt in a medium-sized saucepan with a whisk
Whisk the egg yolks in a different bowl
Slowly whisk in a little of the hot milk mixture to the eggs to temper them
Pour the egg mixture that has been tempered back into the saucepan with the rest of the hot milk mixture
Keep whisking the mixture the whole time
It will take about 5 minutes of cooking and whisking until the mixture gets thick
Now take it off the heat and mix in the butter and vanilla extract until it's smooth
Allow it to cool a bit
Whip the heavy cream and powdered sugar together in a different bowl until stiff peaks form
Put chocolate pudding, whipped cream, and crushed chocolate cookies in serving glasses in that order
Cover it again with more layers
Top it off with whipped cream and chocolate shavings
Put it in the fridge for at least two hours before you serve it
Add more chocolate shavings as a garnish before serving
